Bacon and Mushroom Cheese-Crusted Quiche

Ingredients

Pastry 

  • 150g sifted flour 
  • 150g soft butter 
  • 100g grated cheese 

Filling

  • 125g bacon diced 
  • 1 medium onion diced 
  • 125g diced button mushrooms 
  • 30g butter 
  • 6 xl eggs 
  • 100ml cream 
  • 50g grated cheddar 
  • Salt pepper and mixed herbs 

Method

  1. For the pastry, rub the flour, 150g of butter and 100g of grated cheese together until well mixed.
  2. Divide into 8 portions and press each portion into a muffin mould.
  3. In a pan, soften the onions in butter. Then add the bacon and mushrooms and simmer until cooked.
  4. Season with a pinch of mixed herbs and salt and pepper.
  5. Spoon the fried mixture into the prepared moulds.
  6. In a separate bowl, beat the eggs and cream lightly.
  7. Pour the egg and cream mixture into the moulds evenly. Then, place them into the air fryer basket 4 at a time.
  8. Sprinkle with grated cheddar cheese and bake at 170°C for 30 minutes.

Tip: For a vegetarian option, replace the bacon with sweet peppers
