Biltong (South African Dried Beef)

Biltong (South African Dried Beef)

Cook time: 5 hrs

Ingredients

  • 500g Stir Fry beef strips 
  • 30g Coriander seeds 
  • 5g Black Pepper Corns 
  • 10g Salt 
  • 50ml White Vinegar 
  • 1 tbsp Worcestershire Sauce 

Method

  1. In a food processor, pulse the coriander, salt and pepper for 10 seconds 
  2. In a large bowl add the cracked seeds, beef strips, vinegar and Worcestershire Sauce 
  3. Mix well and rest in the fridge for 24 hours. 
  4. After 24 hours, drain the liquid from the beef. 
  5. Place strips in the air fryer and dehydrate at 55  ̊C for 5 Hours 
  6. After two hours, open the air fryer and stir, breaking apart strips that may have stuck together. 
  7. Allow to cool for a few hours before eating. 

Tip: Biltong should last for around 10 days in a cool climate. In a warm climate store in a fridge.
