The Art of Living Episode Two:

Chris Theodosi & Jesse Orleans (Happyfield)

Chris Theodosi & Jesse Orleans

Owners of Happyfield & Happyshop

We started Happyfield with the intention of bringing Australian and North American breakfast cultures together under one roof. From day one we were much busier than we could have ever imagined, winning The Good Food Guide 'cafe of the year' 2024.

Since then, we have expanded with The Happyshop just two doors down which is a quick service high end takeway joint. Now we serve over 3000 customers a week in the cafe alone. Happyfield has evolved into a neighborhood gem in Haberfield.

Art of Living - Episode 2

In a professional kitchen, the best equipment fades into the background and lets the food do the talking. Tefal brings that same approach home, making cooking simpler so you can spend less time managing the process and more time enjoying what's on the plate.

Cooking Philosophy

Pancakes are your signature — what actually makes a great one, beyond just following a recipe?

In our opinion, what makes a pancake great is the nostalgia behind it. There's something special about the smell of buttery pancakes with maple syrup all over them in the morning that is "O so very comforting".

You both make cooking look effortless. What's one trick that genuinely changes the result?

One trick that can make cooking effortless is making things you actually enjoy eating, that way it's not a chore but an act of love.

What's one step home cooks overcomplicate and how would you simplify it?

Most home cooks try rush through the cooking process which can lead to bland and unappetising food. Better to slow down and keep things simple.

The Happyfield Approach

How do you maintain consistency when you're cooking for a crowd?

We maintain consistency by staying loyal to our suppliers, ensuring we know exactly what we receive daily, and making sure the chefs fully understand the standard we have set. We also eat our food every day because it's just so damn good.

What does "bringing happiness through food" actually look like in practice, day to day?

Bringing happiness through food looks like a smile after a meal or that returning customer who keeps coming back for their favorite dish. It also looks like a packed house day in and day out.

How do you carry that Happyfield feeling into your own home?

Having a cafe that is as rewarding to us as Happyfield is very infectious. The hospitality we provide here doesn't stop when we leave these doors it carries on, out into our conversations with family and friends as well as bringing joy to our personal lives which makes us better people in general.

Home Food & Family

What does a simple, perfect meal at home look like for you?

A simple perfect meal at home looks like a one pot wonder that's not overly complicated but always manages to put a smile on everyone’s face usually becoming a staple in the dinner rotation.

Is there a dish that always brings people together around your table?

For us cooking dishes from our childhood always brings back great memories. Dishes like a well-prepared, Cypriot-style braised leg of lamb or a pot of Guyanese curry chicken will always bring a sense of warmth and comfort to the dinner table.

When you cook at home, what do you reach for first and why?

When I cook at home, the first thing I reach for is the cutting board, it's a no-brainer as you don't wanna be chopping stuff up on the kitchen counter.

Don't cook in a rush. Take a breath, take your time, cook the food you want to cook and you'll have a good time doing it.

Good tools [cookware & appliances] change everything. What difference does it make to how you cook day to day?

It makes a huge difference when you're cooking with the right tools, you can't build a home without the right kit and cooking isn't any different. Having quality, reliable cookware is a must.

What's one piece of advice that would make everyday cooking feel less like a task and more like something you actually enjoy?
