Chili Chocolate Lava Cakes
Chilli Chocolate Lava Cakes are rich and decadent, with a spicy kick from the chilli powder, melting into a gooey centre. Serve warm with whipped cream and fresh berries for an indulgent treat.

Ingredients

  • 150g dark chocolate 
  • 125g unsalted butter 
  • A pinch of chilli powder (or cayenne pepper) 
  • 2 eggs 
  • 3 ½ tbsp caster sugar 
  • 70g self-raising flour 

Optional:  

  • Whipping cream 
  • Fresh berries 

Method

  1. Beat the eggs and sugar until light and fluffy.
  2. Melt the chilli, chocolate and butter in a bowl over Bain marie or in the microwave.
  3. Combine the two mixtures then fold in the flour.
  4. Grease 4 ramekins and fill in with the batter.
  5. Bake at 190°C for 9 minutes.
  6. Turn ‘upside down’ after resting the cakes for 2 minutes.
  7. Serve warm with berries and whipped cream.
