Chocolate Cookies

Soft‑centred, crisp‑edged chocolate cookies with rich butter, warm vanilla notes and melty choc chips. Simple, classic and irresistibly good.

Ingredients

  • 150 g low protein flour (such as plain flour or 00 flour)
  • 40 g cornflour
  • 1 tsp baking powder
  • 85 g soft butter
  • 75 g caster brown sugar
  • 1 beaten egg
  • 120 g chocolate chips

Method

  1. Mix the flour, cornflour and baking powder in a bowl. Set aside.
  2. In another bowl, pour in the soft butter and then the brown sugar. Using a whisk, mix to obtain a very soft texture. Gradually add the egg to the butter and sugar. You should obtain a soft texture.
  3. Pour in the flour/starch/yeast mixture. Fold in with a flexible spatula until you have a smooth dough. Add the chocolate chips and mix to incorporate them without overworking the dough. Shape the dough into balls weighing around 65 g, then flatten them slightly.
  4. Place cookies in the air fryer and cook for 10 min at 180°C.
  5. Remove the cookies from the air fryer. Wait a few minutes before carefully moving them to a wire rack where they will firm up as they cool.
  6. Enjoy the cookies once they have cooled sufficiently.

Tips:

  • For softer cookies, shorten the baking time slightly.
  • Vary the mix-ins to create different flavours of cookies by adding chopped nuts, white chocolate chips or cocoa powder to your dough.
