Homemade Fish and Chips

Crispy golden air‑fried cod with a crunchy crumb, served with a bright tarragon‑lemon mayo. Light, fresh and seriously delicious.

Ingredients

  • 4 cod fillets
  • Salt, pepper
  • 5 tbsp flour
  • 2 eggs
  • 5 tbsp breadcrumbs
  • 1 pot mayonnaise
  • 1/2 lemon
  • 1 bunch tarragon
  • 50 g butter

Method

  1. Prepare the fish: Cut the fish fillets into pieces approximately 4 cm in size. Pat them dry with paper towel, then season with salt and pepper.
  2. Set up the coating stations: Place flour in one bowl, beaten eggs in a second bowl and breadcrumbs in a third.
  3. Make the sauce: In a separate small bowl, mix the mayonnaise with the juice of half a lemon and the chopped tarragon. Cover and refrigerate until serving.
  4. Coat the fish: Coat the fish in flour, dip into the beaten egg and then press into the breadcrumbs. Shake off any excess.
  5. Cook: Place fish in air fryer and place a small knob of butter on each piece. Cook at 180°C for 12 minutes, or until golden and cooked through.
  6. Serve the fish with the tarragon–lemon mayonnaise.
