Mini Apple Turnovers

Flaky golden puff pastry filled with soft vanilla apples. Sweet, comforting mini turnovers perfect for a cosy treat.

Ingredients

  • 2 sheets thick puff pastry
  • 2 apples
  • 2 eggs
  • 1 tbsp milk
  • 2 tbsp vanilla extract or seeds from half a vanilla pod
  • 2 tbsp brown sugar
  • 200 ml water

Method

  1. Peel and dice the apple. Put the cubes in a saucepan, add water and vanilla extract or vanilla seeds. Bring to the boil and simmer over low heat for 10 minutes. Drain and leave to cool.Roll out the puff pastry. Cut out 8 circles of dough with a 9 cm cookie cutter.
  2. Place 1 tablespoon of apple compote in the centre of the circle. Moisten the edges of the dough with a brush. Fold the pastry over to close the turnovers. Using a lightly floured fork, seal the edges.
  3. Separate the egg whites from the yolks. Mix the yolks with the milk. Brush the surface of the turnovers with the egg yolk and milk. With a sharp knife, make three small slits in the top of the turnovers.
  4. Lightly dust with brown sugar.
  5. Place the turnovers in the Easy Fry Air Fryer. Set to cook at 180°C for 10 minutes.

Tip: After sealing the turnovers, place them in the freezer for 5 to 8 minutes. The dough will rise more when cooked.
