Breakfast Frittata

    Ingredients

    • 200g diced butternut
    • 3 rashers streaky bacon
    • ½ onion, diced
    • 1 tbsp olive oil
    • 1 tbsp butter
    • 6 eggs
    • 100g crumbled feta cheese
    • 1 tbsp chopped parsley
    • ¼ tsp garlic salt
    • ½ tsp Dijon mustard
    • Salt and pepper

    Method

    • Air fry the diced butternut at 200 ̊C for 12 minutes, then set aside
    • In a pan, fry the onion and bacon in the oil and butter.
    • When cooked, add the feta and butternut, stir and remove from the heat
    • In a large bowl, whisk the eggs with the parsley, mustard, garlic salt and seasoning
    • Stir in the fried mixture and pour these into the greased Tefal cake pan accessory
    • Bake at 160 ̊C for 25 minutes, then serve.
