Juicy garlic‑rosemary T‑bone steaks grilled to perfection, served with Cajun‑spiced sweet potatoes and a creamy chive yoghurt finish.

Ingredients

  • 4 beef T-bones (approximately 300 g each)
  • 4 tbsp olive oil
  • 4 crushed garlic cloves
  • 2 sprigs fresh rosemary
  • Salt
  • Pepper
  • Freshly ground pepper
  • 800 g sweet potatoes
  • 3 tbsp olive oil
  • 2 tbsp Cajun spices
  • 1 tbsp fresh thyme
  • 200g Greek yoghurt
  • 2 tbsp chopped chives
  • 2 tbsp crushed cashew nuts

Method

  1. Mix the olive oil, crushed garlic cloves and rosemary sprigs in a bowl. Brush each T-bone with the olive oil, garlic and rosemary marinade, then season generously with salt and pepper. Let the meat rest at room temperature for about 15 minutes.
  2. Peel the sweet potatoes and cut them into uniform 2 cm pieces. In a bowl, toss the sweet potato pieces with the olive oil, Cajun spices, thyme, salt and pepper.
  3. Heat the uncoated frying pan over medium-high heat. Add the sweet potatoes in a single layer. Cook for about 15 minutes, turning them frequently for even cooking, until golden and tender.
  4. Place the T-bones in the hot pan. Cook each side for about 4–6 minutes for medium, adjusting the time according to your preferred doneness (less for rare, more for well done). Remove the steaks from the pan and let them rest for 5–10 minutes before serving.
  5. In a small bowl, mix the yogurt and chives. Serve the T-bone with the sweet potatoes and add the yogurt sauce. Sprinkle with crushed cashews.
